Who We Are

Officially founded in 2020 when we started a small bakery /coffee shop, roasting coffee began years before while living abroad our sail boat
Using justice a thrift store work and a wooden spoon over the boat’s propane stove, with all the hatches wide open to keep the cabin from filling with smoke, Peter started his roasting journey.
He then read every book he could on coffee and roasting, gleaning insights, and finally receiving positive feedback from friends andfamily about his roasts.
When we opened our coffee shop it only made sense to roast the coffee for it!
We now use manually Operated traditional drum roasters, ensuring consistency with roast Profiling computer software bringing the best of traditional roasting and Technology to every pound of coffee.

Philosophy

When it comes to coffee roasting, we take a bit of a different approach, with a background as varied as engineering and photography we bring both the technical and the art to our coffee roasting philosophy. We have found great value in the technical, learning from the third wave roasters of the last couple of the decades, while applying our artistic side by pushing boundaries in acceptable roasting practices and at times even completely breaking them, if it makes for better coffee. While we embrace lighter roasts for some coffees, we are not frightened of the dark either, our preferred roast level usually falling in the medium category. We call a spade a spade and don’t parade a light roast coffee as dark roast ;if you order a medium roast from us, you will get a medium roast, if you order a dark roast you will get a dark roast. If you prefer your coffee roasted so light that you are using adjectives usually reserved for tea to describe it, we probably are not your roaster. If you want a coffee that retains its unique origin characteristics while still tasting like coffee you have come to the right place.
